Picture a rose. Not in a vase, not wrapped in cellophane at a petrol station -- on the stem, in a greenhouse, at 2,200 metres above sea level in the Kenyan highlands, at 5am. The equatorial sun is not yet up. A worker with scissors moves along the row, cutting at an angle, dropping stems into a bucket of water.
That rose needs to be in Dubai within 48 hours. And the clock started the moment the stem was cut.
This is flower logistics. It is one of the most demanding cold chain operations in global freight -- more time-sensitive than most pharmaceuticals, less forgiving than fresh fish, and almost entirely invisible to the person who buys the bunch at the end of it.
The moment a flower is cut, it begins to die. That sounds dramatic, but it is just biology. The stem can no longer draw water from the soil. Respiration continues -- the flower consumes its own stored energy. Ethylene gas builds up, accelerating ageing. Bacteria colonise the cut end. Every hour at the wrong temperature shaves days off the vase life the buyer will eventually get.
For most cut flowers, the target temperature throughout the entire journey is between 1 and 4 degrees Celsius. Not approximately. Not roughly. Consistently, at every transfer point, in every vehicle, in every storage facility, from the farm gate to the florist's cold room. A single temperature break -- a few hours in a warm cargo hold, a delay on a sun-baked apron -- can undo everything that came before it.
Flowers transported without proper cold chain management can lose 15 to 20 percent of their vase life. That is the difference between a bouquet that lasts ten days and one that wilts in a week.
The best flower farms harvest in the early morning, when temperatures are lowest and stems are fully hydrated from the cool night. The cut flowers go immediately into buckets of chilled, treated water and move within minutes into pre-cooling rooms. The goal is to pull the field heat out of the stems as fast as possible -- from ambient farm temperature down to 2 to 4 degrees Celsius within a few hours.
From pre-cooling, the flowers are graded, sorted by stem length and bloom quality, bunched, and sleeved. They are packed into cardboard boxes -- long, flat, unmistakable if you have ever seen them on a cargo belt -- designed to allow airflow around the stems. Every box is labelled with the variety, the farm, the pack date, and the count.
Then they go back into the cold room to wait for the truck.
The ground leg is where cold chains most often break. A refrigerated truck arrives at the farm, is loaded, and drives to the nearest international airport -- Nairobi, Addis Ababa, Amsterdam, Bogota, depending on where the flowers are grown. The journey might be two hours, it might be six. The truck temperature needs to hold throughout.
Kenya is the largest exporter of cut flowers to the UAE. Ethiopia is the second. Ecuador supplies a significant share of the world's roses. The Netherlands, despite its latitude, remains a global hub -- flowers from across Africa and South America pass through Amsterdam's Schiphol airport and the vast auction houses nearby before being redistributed across Europe and the Gulf.
Dubai operates its own dedicated facility: the Dubai Flower Centre at Dubai International Airport, a purpose-built cold chain hub capable of handling thousands of tonnes of fresh flowers annually. It is one of the reasons Dubai has become a significant re-export point for flowers moving onward across the Gulf and into South Asia.
Most cut flowers travel in the belly of passenger aircraft, not on dedicated freighters. The economics work because the routes already exist and the belly space is available. The challenge is that belly cargo temperatures are not always as tightly controlled as dedicated cold chain freighters, and the flowers share space with luggage and other cargo.
For premium consignments -- high-value roses, orchids, peonies in season -- some shippers use temperature-controlled unit load devices, essentially insulated containers with active cooling that sit in the belly hold and maintain their own environment regardless of what happens around them.
The flight itself is often the most stable part of the journey. Aircraft cargo holds are cold. The risk points are the transitions: off the truck, onto the apron, through the cargo terminal, into the hold. Every minute at ambient temperature in a hot climate -- Dubai's summer apron sits at 40-plus degrees -- matters.
Flowers arriving into Dubai clear through the Dubai Flower Centre. They need phytosanitary certificates -- documentation from the origin country confirming the shipment is free of pests and plant diseases. Without the right paperwork, a consignment can be held, inspected, or rejected. For a product with a 48-hour window from cut to cooler, a customs delay is not just inconvenient. It is potentially the end of the shipment.
This is where good freight forwarding pays for itself. An experienced agent knows which documentation needs to accompany which origin, which phytosanitary certifications are currently being scrutinised by UAE authorities, and how to pre-clear where possible to minimise time on the apron.
From the flower centre, refrigerated vehicles distribute to wholesalers, markets, hotel groups, and florists across the UAE. The Wholesale Flower Market at Al Aweer in Dubai is the main distribution point -- a pre-dawn world of forklift trucks, stacked boxes, and buyers with lists who have been there since 3am.
A rose that costs a few dirhams in a Dubai flower shop has typically travelled between 4,000 and 8,000 kilometres to get there. It has passed through at least four cold storage facilities, two or three vehicles, one or two cargo terminals, and a customs clearance process. It has been handled by perhaps a dozen pairs of hands. The entire journey, from cut to cooler at its destination, needs to happen in under 72 hours for the buyer to get a vase life worth having.
The margin for error is small. The logistics required to hit that window, consistently, at scale, across multiple origins and destinations simultaneously, is genuinely complex.
The failures are predictable: a truck that runs warm because the refrigeration unit was not serviced; a consignment held at customs because a certificate was missing or incorrectly dated; a flight delayed by six hours with the flowers sitting in a warm cargo shed; a box at the bottom of the pallet that never gets adequate airflow. Any one of these can halve the vase life of an otherwise well-handled shipment.
The best cold chain operations treat every transfer point as a risk to be actively managed, not assumed to be fine. Temperature loggers inside boxes, real-time tracking, pre-arrival notifications to receiving warehouses, pre-cooled vehicles waiting on the apron -- these are the differences between a flower that lasts and one that does not.
There is a reasonable chance the roses you pick up in Dubai this week were growing in African soil four days ago. They crossed a continent and a sea in a refrigerated box in the belly of a passenger jet, cleared customs at one of the world's busiest cargo airports, and were driven to the shop in a chilled van in the early hours of the morning.
The flower did not know any of this. But someone had to move it.
